Ingredients: makes 3-4 servings

  • 1/4 cup + 1 tablespoon mayo
  • 1 tablespoon sour cream
  • 1 1/2 teaspoon dijon mustard
  • 1/2 teaspoon fresh lemon juice
  • 1/2 cup grapes, quartered
  • 1 tablespoon pecans, chopped
  • 1 tablespoon walnuts, chopped
  • 1 1/2 cup cooked chicken, diced
  • 1 1/2 tablespoon celery, finely chopped
  • salt/pepper, to taste

  • In a bowl, stir together first four ingredients.
  • Mix in grapes, nuts, and chicken.
  • Add celery, and turn to coat.
  • Season with salt and pepper to taste.

  • If desired, layer spinach (or arugula) and chicken salad on buttered multi-grain toast.
  • OPTIONAL ADD-INS: 1/2 – 1 tablespoon bleu cheese, 1/4 cup diced apple, splash of hot sauce or dash of red pepper flakes
